Amerex showcases its natural preservation solutions at CFIA

Amerex recently took part in CFIA Rennes, the leading European trade fair for the food processing industry, held annually in Rennes (France). The event brings together more than 2,000 exhibitors and thousands of professionals from the agri-food sector to discover the latest innovations in ingredients, processing, packaging and food safety.

Amerex was represented by Alejandro Rodríguez, Technical Director, and Zoe, Sales Technician, who joined the event at the stand of our partner Dempsey Europe to present several real-world applications of our fermentation- and biotechnology-based solutions.

During the exhibition, the team presented successful case studies in the dip & spread category, demonstrating how Amerex ferments can improve microbiological stability, extend shelf life and maintain the sensory quality of these products, responding to the growing demand for natural and clean-label preservation solutions.

The team also addressed some of the most pressing challenges currently facing the food industry, including the control of Listeria monocytogenes in ready-to-eat foods and strategies for nitrite reduction, topics that are particularly relevant in light of recent regulatory developments in Europe.

Participating in CFIA Rennes enabled Amerex to exchange knowledge with food manufacturers from across Europe, gain insights into emerging technological trends and continue driving innovative solutions that help the food industry develop safer, more natural products aligned with evolving regulatory and consumer expectations.

AMEREX PARTICIPATES IN ANFACO-CYTMA’S III “DISRUPTION AND INNOVATION IN THE MARINE AND FOOD INDUSTRY” CONFERENCE

Last Thursday, Amerex took part in the III “Disruption and Innovation in the Marine and Food Industry” Conference, organised by ANFACO-CYTMA at its headquarters in Vigo. The event brought together companies, researchers and technology centres to analyse the trends that are transforming the food sector.

Our Technical Director, Alejandro Rodríguez Calero, participated in Block 1, dedicated to new food ingredients, alongside representatives from Grupo Consorcio and IDENER.AI. This block explored three key innovation areas: hybrid proteins, natural ferments, and computational biology applied to the development of functional ingredients.

During his presentation, “Ferments: A New Dimension for Food Applications”, Alejandro highlighted how fermentation has become an essential tool for advancing towards safer, more natural and more sustainable food. He pointed out that although the full potential of this biotechnology will continue to be validated in the coming years, the tools and possibilities it offers are practically endless. At Amerex, we have a solid track record in using ferments for food preservation and continue exploring new applications that generate value for the industry.

Amerex present at the International Conference on Fermented Foods in Italy

From October 27 to 30, 2025, Amerex took part in the International Conference on Fermented Foods, held at the NOI Techpark in Bolzano, Italy.
This international event brought together leading researchers, universities, and companies to discuss the latest advances in fermentation, biotechnology, and functional foods.

Representing Amerex, our Technical Director Alejandro Rodríguez attended the conference with the aim of learning first-hand about new fermentation trends applied to improving food safety and developing natural ingredients.

Throughout the sessions, innovations were presented related to the microbiota of fermented foods, the valorization of agri-food by-products through fermentation, and new biopreservation strategies — topics directly aligned with Amerex’s ongoing work in natural ferments for food preservation and quality.

Fermentation is consolidating itself as one of the most promising biotechnological tools for the future of the food sector. AMEREX INGREDIENTS, CEMP’S PARTNER IN TRAINING FOOD SAFETY EXPERTS

Amerex values collaboration between industry and academia by partnering with the European Centre for Master’s and Postgraduate Studies (CEMP) to host students from its Master’s in Food Technology and Safety programme.

This master’s degree, taught online, offers comprehensive and advanced training in all key aspects of food safety and food manufacturing technology. Students acquire advanced knowledge in key areas such as microbiology, manufacturing technology, contaminant analysis, applied biotechnology, food analysis techniques, and safety and quality regulations (HACCP and international certifications).

The students currently hosted by Amerex Ingredients for their internships are integrated into the R&D department, actively participating in the development of new biotechnology-based preservative products. The internship allows them to put into practice the knowledge acquired during the master’s degree and to integrate into a work environment where they see ‘use cases’ with real customers and face new challenges.

CEMP recently published a video on its website explaining how the synergy between a rigorous teaching environment such as CEMP and practical experience at Amerex helps to better prepare students and strengthen their employability.

“For us, contributing to the training of future professionals is very important. These are people who are going to dedicate themselves to food safety, which is our passion, and on top of that, we can learn from them while they are with us” emphasises Alejandro Rodríguez, technical director at Amerex.

AESAN CONFERENCE ON WORLD FOOD SAFETY DAY

On 6 June 2025, Amerex attended the conference organised by the Spanish Food Safety and Nutrition Agency (AESAN) entitled ‘Food Safety Culture: From Theory to Practice’, held in Madrid to mark World Food Safety Day (7 June).

During the conference, regulatory and strategic advances related to the implementation of a true food safety culture in companies were discussed, emphasising the importance of behaviour, leadership and awareness among all actors in the food chain.

At Amerex, we fully share this vision: food safety should not be limited to regulatory compliance, but should be part of the culture of organisations.

AMEREX PRESENTS PROTECTIVE CULTURES AGAINST LISTERIA MONOCYTOGENES AT THE ANICE QUALITY GROUP

On 20 May 2025, Amerex participated in the technical conference of the ANICE Food Quality and Safety Group, held at the Official College of Veterinarians of Madrid (COLVEMA). The meeting brought together companies from the meat sector and established itself as a key forum for discussing the main technological and regulatory challenges in food safety.

Representing Amerex, Alejandro Rodríguez, the company’s technical director, gave a presentation entitled ‘Protective cultures against Listeria monocytogenes in meat products,’ in which he explained how our biotechnological solutions are capable of effectively inhibiting the growth of this pathogen, as well as other bacteria such as E. coli and Salmonella.

During his presentation, Alejandro showed practical application results in foods such as pâtés and cooked turkey slices, where the cultures developed by Amerex achieved significant reductions in Listeria spp. He also explained how these natural ferment-based ingredients also help to maintain the characteristic reddish colour of meat products, offering a visual and functional alternative to traditional nitrites.

One of the highlights was the reminder that the ferments used by Amerex comply with the safety criteria established by international bodies such as EFSA and USDA, which guarantees their suitability for industrial applications.

The conference also featured relevant presentations by experts from the Complutense University, AESAN, IRTA and Amcan, addressing issues such as the reduction of nitrites, new legislation on Listeria monocytogenes, dry-aging of meat and alternatives to smoke flavours.

Amerex presents its natural ferments technology in the Food4Life-Spain Food Safety Working Group

On 10 March 2025, Amerex participated in the ‘Food Safety’ Working Group of the Food for Life-Spain Technology Platform (PTF4LS).

On this occasion, Alejandro Rodríguez, Technical Director of Amerex, gave a presentation entitled ‘Ferments for natural preservation in food’.

This was Amerex’s second intervention in the platform’s working groups, after officially joining at the beginning of the year. On this occasion, he shared in detail how fermentation biotechnology can become an effective tool to improve food safety, extend shelf life and reduce additives in a natural way.

During the presentation key aspects were addressed such as:

  • ✅ The ‘all natural nature of Amerex ferments: free of GMOs, allergens, alcohol, and suitable for Kosher, Halal or vegan diets.
  • ✅ Mechanisms of action such as the production of bacteriocins and natural metabolites, without the need to acidify the food or alter its organoleptic properties.
  • ✅ Real application cases in meat, dairy, vegetable, bakery or ready meals products, including vulnerable matrices such as hummus, bacon or fresh sausages.
  • ✅ Positive impacts on the value chain: quality improvement, waste reduction, alert elimination and brand positioning.

The presentation also included references to recent trials in collaboration with European technology centres, demonstrating the efficacy of our solutions against Listeria monocytogenes, Clostridium spp. and other microorganisms, even under conditions of stress or cold breakdown.

Participation in this group is an example of Amerex’s expertise and its ability to actively collaborate in initiatives that promote a safer, more sustainable and innovative food industry.

Amerex participates in the CFIA 2025 together with Amcan, reinforcing its expansion in the French market

From 4 to 6 March 2025, Amerex was present at the CFIA (Carrefour des Fournisseurs de l’Industrie Agroalimentaire) fair in Rennes (France), one of the most important events for the food ingredients industry in Europe.

Represented by Alejandro Rodríguez and Zoe Malvido, we were part of the Amcan stand (Hall 4, Stand A14), as part of our collaboration in the French market. This joint participation is a new step in the consolidation of our alliance, after the technical workshop held on 18 February (you can read the news here).

At the CFIA 2025 fair, we shared space with other international firms such as Biospringer by Lesaffre, Lionel Hitchen, Flavourstream and ECD Ingredients, presenting a comprehensive proposal of innovative solutions for the food industry.

At Amerex, we highlight our natural preservation solutions designed to guarantee food safety and extend the shelf life of products, without sacrificing our commitment to sustainability and innovation.

Amerex presents nitrite-free solutions for the meat industry: Workshop in France

On 18 February 2025, Amerex participated in a professional workshop organised in collaboration with the French company Amcan, with whom we have been working for months to distribute our solutions in the French market.

The event, held in France, brought together manufacturers and experts from the cured meat sector, with a special focus on natural alternatives to nitrites.

Representing Amerex, Alejandro Rodriguez (Technical Director) and Zoe Malvido (Biotech Advisor) led several technical presentations and live demonstrations focusing on our Fermitrat Export and Biamex NC solutions (protective fermentation technologies).

 

 

Among the highlights of the meeting:

  • Practical demonstrations of liquid smoke-free and nitrite-free formulations.
  • Challenge test results against Listeria monocytogenes and Clostridium spp. demonstrating that Amerex solutions offer comparable (or superior) microbiological protection to traditional nitrites.
  • Colour stability in lardons after 32-48h of resting, with visual results equivalent to those obtained with nitrites.
  • Regulatory analysis to address regulatory changes in France and Europe, where progress is being made towards reducing or eliminating the use of nitrites in meat products.

Attendees particularly appreciated the combination of applied science, microbiological data and practical insight provided by Amerex, reaffirming the role of our solutions as an effective, safe and aligned response to new industry requirements.

This workshop not only strengthened the collaboration with Amcan, but also consolidated Amerex’s position as a European benchmark in natural preservation for the meat industry.

Amerex participates in the Madrifood cluster’s meeting on Health, Food Safety and Quality

On 11 February 2025, Amerex took part in the Working Table on ‘Health, Food Safety and Quality’, organised by the agri-food cluster Madrifood.

This meeting brought together companies, research centres and entities from the sector to discuss and collaborate on the main challenges and opportunities related to health and quality in food production.
