Its usual use is focused on two main ways: on the one hand, to generate a bright red colour or similar (depending also on the matrix) that is attractive to the final consumer and improves the appearance of the product. On the other hand, it has a good preservation capacity mainly due to its control of spore-generating microorganisms and their toxins.
