NITRITES

Nitrites are chemical products commonly used in various food sectors. Its usual use is focused on two main ways: on the one hand, to generate a bright red colour or similar (depending also on the matrix) that is attractive to the final consumer and improves the appearance of the product. On the other hand, it has a good preservation capacity mainly due to its control of spore-generating microorganisms and their toxins.

At Amerex, despite how surprising it may seem, we have natural solutions based on microbiology that can supply its colour and protection functions without the need to add nitrites of any kind of origin.

COLOUR IN FRESH PRODUCTS

Here you can see the capacity to generate colour in products without any type of thermal treatment:

COLOUR IN COOKED PRODUCTS

On this side, you can see our experience in products that have undergone a cooking process after an optimal rest of 48 hours:

PRESERVATION

In this case, you can see a challenge test against Clostridium, a genus of main interest for which nitrifiers are usually added.
