Within the food industry, enterobacteriaceae testing has been used as an indicator of inadequate cleaning or post-processing contamination of both the production equipment and environment and the raw material or processed food.

Enterobacteriaceae is a family of gram-negative bacteria which include coliforms and recognized pathogenic bacteria such as Escherichia coli or Salmonella. Operators’ hands are the main vector of contamination, which is why despite these products are not resistant to heat treatment, if they are handled by humans after post-treatment they can be susceptible to contamination.
