E. COLI

Escherichia coli or commonly called E. coli, sounds familiar, doesn’t it? It is a gram-negative bacterium found both in our body and in animals. Most strains are harmless to our health, however, others can cause serious food poisoning, leading to diarrhea and stomach cramps.

The presence of E. coli is related in the food industry as an indicator of contamination by human handling (so it can be in many foods) and even fecal contamination (carrying vegetables or spices). That is why it is directly associated with good manufacturing practices, besides being one of the most controlled pathogens.
