Where is E. coli found?
Escherichia coli or commonly called E. coli is a Gram-negative bacterium that is found both in our bodies and in animals. Most strains are harmless to our health, however, others can cause serious food poisoning leading to diarrhoea and stomach cramps.
What foods contain E. coli?
The presence of E. coli is related in the food industry as an indicator of contamination by human handling, so it can be in a wide variety of foods, and even faecal contamination (carrying vegetables or spices). This is why it is directly associated as a measure of good manufacturing practice, as well as being one of the most closely monitored pathogens.
What are the consequences of E. coli in food?
When strains such as E. coli 0157: H7 infiltrate our food, it can produce Shiga toxins, which are real chemical weapons: they cause serious food poisoning affecting thousands of people annually.
