Acetic acid or acetate (in salt form) is a chemical additive widely used for the preservation of processed foods in all sectors of industry. It is the most functional component of vinegar and therefore preserves mainly by its acidity regulation.
However, its use is particularly delicate because, even at low doses, it can adversely change the organoleptics of the final product. Moreover, it is necessary to include it in the labelling as an additional E-number.
