Potassium nitrite (E 249), sodium nitrite (E 250), sodium nitrate (E 251) and potassium nitrate (E 252) are the authorised additives.<\/p>\n<p>Their usual use is focused on two main ways: on the one hand, to generate a bright red colour or similar (depending also on the matrix) that is eye-catching for the final consumer and improves the appearance of the product. On the other hand, to have a good preservation capacity thanks, in part, to its control of spore-generating micro-organisms and their toxins.<\/p>\n<p><strong><em>What are the current problems with nitrites?<\/em><\/strong><\/p>\n<p>The use of nitrites raises concerns because of possible negative consequences for human health. When nitrates break down, they can react with amino acids present in food to form nitrosamines, potentially carcinogenic compounds.<\/p>\n<p>Legislation is increasingly aimed at reducing nitrites. The French government encourages limiting their use to what is strictly necessary and plans a gradual phase-out towards their complete elimination.<\/p>\n<p><strong><em>What are the conservation
