LISTERIA
Listeria monocytogenes is a pathogenic bacteria that causes one of the most dangerous food poisoning, listeriosis.
It is able to reproduce in a wide range of pH (between 4.0 to 9.6), of temperature (from -1ºC to 45ºC) and water activity (from 0.90). Moreover, it is able to remain latent at freezing temperatures in order to reproduce just as effectively once the product is unfrozen.
Listeria can be associated with the raw material, but it is also capable of generating biofilms on the machinery. This is why the RASFF (Rapid Alert System for Food and Feed) receives numerous reports on this pathogen.
